Commercial gallic acid is produced through a microbial bioconversion process that typically starts with tannic acid, a polyphenolic mixture obtained from gall nuts or tara pods, and subject it to controlled fermentation using Aspergillus or Penicillium species. These microbes hydrolyse the gallotannins, releasing gallic acid, which is then separated, purified by crystallisation, and dried to yield a high purity technical product. |
